The next step in the development
of your design plan is to prepare an overall production timeline showing how
you will prepare all of the 4 to 6 food items you selected in the time you have
available.

The type of information you will need to include on your overall production timeline is:

The type of information you will need to include on your overall production timeline is:
- The date each food item will be
produced
- Any preparation which needs to
be done prior to preparing the food item such as soaking dried fruit for jam,
marinating of meat, selecting jars for preserved products, collecting props for
photography.
- Note any other important school
or personal commitments you will have during this period which will have an
impact on you over this time.
Food item notes-Refer to your SAT manual
This section includes notes for each of your 4-6 food items under the following headings
- Properties of the 3-4 main ingredients-physical, sensory, chemical properties briefly and then discuss the functional properties
- Complex process- Discuss complex process in food item and how the steps and decsiions effect the final physical and sensory properties
- Tools and equipment- outline the main tools and equipment and their role in the complex process of technique. Safety considerations
- Preservation techniques-If the product is to be preserved, identify the technique you will use and explain how this method of preservation extends the shelf life of the food item and prevents food spoilage.
- Techniques of cooking
- Safety and hygiene relevant to producing the food item
